How to make the perfect chana masala spice mix dish?

Ingredients:

1 teaspoon cumin seeds

1 teaspoon coriander seeds

1/2 teaspoon fennel seeds

1/4 teaspoon black peppercorns

1 tablespoon ground ginger

2 teaspoons ground turmeric

2 teaspoons ground cumin

1 teaspoon ground coriander seed

1/2 teaspoon ground cardamom seed powder or 3-4 green cardamom pods, crushed in a mortar and pestle (optional)

1/4 teaspoon ground cloves

2 bay leaves

1-inch cinnamon stick

3-4 black peppercorns

1 large onion, finely chopped

1 tablespoon finely grated ginger

6 cloves garlic, finely chopped

2 green chilies, slit lengthwise (optional)

2 teaspoons ground coriander

1 teaspoon ground cumin powder

1/4 teaspoon turmeric powder

1 can (15 oz) diced tomatoes with their juice or 3 medium tomatoes, chopped

1 cup water or as needed

2 tablespoons chickpea flour or all-purpose flour dissolved in 2 tablespoons water (slurry)

1/2 cup (120 ml) coconut milk or heavy cream (optional)

1 tablespoon chopped fresh cilantro leaves, for garnish

Directions:

1. In a pan, dry roast the cumin seeds, coriander seeds, fennel seeds, black peppercorns, ginger powder, turmeric powder, ground cumin and ground coriander seed over medium heat until fragrant. Keep stirring so they don't burn. Turn off the heat and let the spices cool down completely. Once cooled, grind them to a fine powder using a coffee grinder or spice grinder.

Tip: You can also use ready-made garam masala powder instead of making your own spice blend.

2. Heat oil in a pan over medium heat. Add the bay leaves, cinnamon stick, black peppercorns and fry for a few seconds until fragrant.

3. Add the onions and fry until golden brown.

4. Add the ginger, garlic and green chilies (if using) and fry for a minute.

5. Add the ground spices (cumin powder, coriander powder, turmeric powder, ground cumin powder, garam masala) and fry for a minute until fragrant.

6. Add the tomatoes and cook until they are soft and pulpy.

7. Add water and bring it to a boil. Reduce the heat to low and simmer for 10 minutes or until the gravy thickens slightly.

8. Add the chickpea flour or all-purpose flour slurry and stir well.

9. Add the coconut milk or heavy cream (if using) and simmer for another 5 minutes.

10. Garnish with fresh cilantro leaves and serve hot with rice or roti/chapati.
